I'll be going to Italy next week. One of the highlights will be dining at Dario Cecchini's restaurant in Chianti. Dario is the famous Italian butcher featured in Bill Buford's book "Heat". In the article, Dario visits Guss Meat Co. in Mid-Wilshire. Many restaurants including JAR, La Terza and Table 8 get their meat there. I haven't been there yet, but will now make a special trip there. The Times suggests you call in your order a day in advance.
