The homemade paella at Antonietta's birthday celebration over the weekend really hit the spot, but the real treat was her son Andy's Coconut Pyramids that he made for us.

2 Egg whites
5 Ounces sugar
5 Ounces chopped coconut
Whisk egg whites until stiff. Fold in sugar and coconut. Put in small pyramids onto a baking sheet. Cook at 275 until golden brown.
